If you love iced Christmas cakes then here’s the right cake for you!
Using our Medium sized 2.00 kg topless Traditional Fruit cake we lightly brush our cakes with my cousin Josie's Otago homemade Apricot Jam.  Carefully we roll out our almond icing over the cake and gently smooth out. Using the same process, we then apply another layer this time using white icing. Once the two layers of icing are on we then decorate the tops with our own home made decorations. 
Yes it’s a labour of love... but worth the effort!
